The Multi-Blend Flour is a mix of flours made by Authentic Foods. <a href="http://glutenfree-supermarket.com/flourblend.aspx#multi-blend" rel="nofollow">You can buy it here</a>. You can also make it yourself using <a href="http://cookingglutenfree.com/flourmix2.htm" rel="nofollow">this recipe</a>.

In addition to using this flour in these recipes, you can use this flour blend as a substitute for wheat flour as long as there is no yeast in the recipe. Just substitute 3/4 cups of the Multi-Blend Flour for 1 cup of wheat flour and double the baking powder/soda in the recipe.

Wow! This is great! In the Dayton-Cincinnati, OH area Authentic flours do not seem to be available, so I use the gritty, brown rice flour. Everything turns out really good, but in some things a person can feel the slightly gritty texture. The price of Authentic flours are so expensive and having to purchase via email + shipping was just too much. However, I decided to give in and try the brown rice.
FYI, I cannot say enough positive things about Annalise Roberts'cookbooks, they are the BEST! Lorraine is right about Ms Roberts raving about Authentic products, which is the primary reason I decided to go ahead with the Authentic brown rice flour. I do quite a bit of baking, so I mix my flours according to Annalise Roberts' instructions. I will be anxious to see if I can tell that big of a difference in how things turn out.

Cassie, I just wanted to personally thank you for starting this blog! I just added it to my iGoogle home page. I am fairly new to discovering I have a gluten sensitivity and haven't done any GF baking YET, BUT just discovered Annalise Roberts' book "Gluten-Free Baking Classics" and how she raved about Authentic Foods' products. Also want to check out Karen Robertson's book. Just also discovered a local gluten-free shop in my area who carries your products. So I am excited about getting my KitchenAid mixer back out and getting to my new way of baking! Looking forward to trying the recipes you have posted.
